Say hello to the new cookie in town, Blueberry Pancake Cookies! Made with just 6 ingredients – these cookies are the ultimate twist with the most delicious blueberry pancake flavor with chunks of white chocolate.

  1. In a large bowl, cream together the butter, egg and maple syrup until creamy
  2. Add in the pancake mix and mix again
  3. Fold in the blueberries and white chocolate chips then add the dough to the fridge to set for 15 minutes or so
  4. Preheat oven to 350 degrees and line a large baking sheet with parchment paper and/or grease well
  5. Scoop about 2 tablespoons of cookie dough into your hand and roll into a ball and add to baking sheet. Repeat for the rest of the dough
  6. Bake for 13-15 minutes or until the cookies are just about to golden on the edges
  7. Allow the cookie to cool for a few then enjoy!


*Store in airtight container for 3 days or freezer for 2 months
