5-minute White Bean Feta Dip

Ingredients

Scale
  • 1 15-ounce can white beans
  • 1 garlic clove
  • 1/3 cup feta cheese
  • 1 tbsp of the water from feta cheese
  • 1/4 cup extra virgin olive oil
  • Lemon juice from 1/2 lemon
  • Fresh parsley
  • Optional: blistered tomatoes (recipe coming soon)

Instructions

  1. Add the beans, cheese, water, oil and lemon juice to a food processor and blend until creamy (but with some chunks)
  2. Spread across a plate or add to a bowl then drizzle an olive oil swirl on top if desired and some fresh parsley
  3. Scoop with your favorite bread, crackers or chips and enjoy!

*Keep in airtight container in fridge for 5 days
