Absolutely Delicious Mushroom Noodle Pie made with only a few simple ingredients for an easy savory side dish. A healthier take on a noodle casserole meets kugel!

Yield: Serves 6-8 1x


  • 8 ounces uncooked egg noodles
  • 4 eggs, whisked
  • 1 large sweet onion, sliced
  • 3 cups mushrooms of choice, sliced (we used shiitake, oyster and baby bella)
  • Sea salt and black pepper to taste


  1. Cook the noodles per instructions then set aside to cool completely (I rinsed in cold water to prevent sticking!)
  2. Sauté the onions and mushrooms in a large skillet with oil of choice for about 5-10 minutes
  3. Allow the mushrooms and onions to cool completely
  4. In a large bowl toss together the pasta, eggs and cooked mushrooms and onions together with some sea salt and black pepper until fully combined
  5. Add the mixture to a well-greased 8 or 9 inch round or square baking dish and cook in oven for 40-45 minutes at 350 degrees F
  6. Allow the pie to cool for a few then slice and enjoy!


*Store leftovers in fridge for 5 days or you can freeze for 2 months! This is a great dish to make ahead of time for holidays and then defrost overnight and reheat in oven at 350 for a bit until warm!
