Air Fryer Latkes (gluten-free)

These easy Air Fryer Latkes are a must-make recipe when the craving for latkes strikes. Made with all gluten-free and grain-free ingredients and making your kitchen 100x less messy than the traditional way of making latkes.

Yield: Makes 18-20 latkes 1x

Ingredients

Scale
  • 3 russet potatoes, peeled
  • 1 small yellow onion
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup tapioca flour
  • Sea salt and ground black pepper, to taste
  • Topping ideas: chopped fresh chives, sour cream and applesauce

Instructions

  1. Preheat the air fryer to 400 degrees F or oven to 400 degrees F
  2. Grate the potatoes and onion on the large holes of a box grater
  3. Transfer the mixture to a kitchen towel and pull up the sides of the towel then squeeze out the moisture as much as possible
  4. Place the potato mixture in a large bowl and add the eggs, flours, salt, and pepper and stir until well combined
  5. Grease baking sheet, air fryer racks or basket with cooking spray (will depend on what kind of air fryer you have)
  6. Add about 2 tablespoons of potato mixture to the baking sheet and flatten to form a patty then repeat for remaining mixture (don’t overcrowd the air fryer or baking sheet!)
  7. Grease the tops with oil or spray with cooking spray
  8. Then cook in the air fryer for 8 minutes or oven for 8 minutes
  9. Flip them over, grease again and continue to cook for 5 more minutes, or until golden brown and crisp (if using oven you’ll need another 10 minutes or so!).
  10. Serve with desired toppings!

Notes

*Store leftovers in fridge for 5 days and reheat in oven or skillet
