These Brown Butter Birthday Cake Banana Blondies are the perfect way to use up spotty bananas and satisfy your sweet tooth craving. These are made with gluten-free ingredients and are ready in 30 minutes.

  • Cook Time: 20 mins
  • Total Time: 30 mins

Yield: 9 blondies 1x

Ingredients

Scale
  • 1 stick (1/2 cup) unsalted butter
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup yogurt of choice
  • 1 1/2 cup almond flour (or 1 1/4 cup gf oat flour)
  • 2 teaspoons baking powder
  • Sprinkles (I don’t measure!)

Instructions

  1. Preheat oven to 350 degrees F and line an 8×8 baking dish with parchment paper
  2. Add the butter to small saucepan and warm over medium heat, stirring frequently
  3. Allow the butter to continue to melt over medium heat and it will start to have a nutty flavor and deepen in color (about 5-8 minutes)
  4. Remove pan from stove and allow the butter to cool
  5. In a large bowl, mix together the butter, bananas, eggs, maple syrup, vanilla extract, almond extract and yogurt until combined
  6. Mix in the almond flour and baking powder until fully combined
  7. Fold in sprinkles then add batter to baking dish and evenly spread across
  8. Bake in oven for 22-25 minutes, until top is golden and you stick toothpick in and it comes out clean (yo may need more time depending on baking dish and the bananas)
  9. Allow the blondies to cool then slice and enjoy!
