This Buckwheat Salad with Creamy Goat Cheese Dressing is one of the most delicious, healthy and satisfying salads to make and tossed in a homemade creamy goat cheese dressing.

Ingredients

Scale

Salad:

  • 2 cups cooked buckwheat
  • 2 cups baby arugula
  • 1/2 cup seedless cucumbers, chopped
  • 1/2 cup steamed or roasted beets, sliced and skin removed
  • 1/4 cup scallions, chopped (green part)
  • 1/3 cup canned artichoke hearts, chopped
  • 1/2 cup toasted pistachios

Creamy goat cheese dressing:

  • 2 tablespoons goat cheese
  • 1/3 cup extra virgin olive oil
  • Juice from 1/2 lemon
  • Juice from 1/2 lime
  • 6 mint leaves
  • 3 chives
  • 2 tablespoons water

Instructions

  1. Add salad ingredients to a large bowl and toss
  2. Add dressing ingredients to a blender to blend until smooth and creamy
  3. Drizzle dressing on top of salad and enjoy!

Notes

*If prepping salad ahead of time – leave dressing on the side so it doesn’t get soggy. Dressing and salad stay fresh for 5 days
