Copycat Crumbl Churro Cookies made with paleo + vegan ingredients. These are easy to make and home and a healthier version than the cult favorite Crumbl cookie.

Ingredients

Churro cookies:

  • 1/3 cup liquid coconut oil
  • 1/3 cup non-dairy milk
  • 1 teaspoon vanilla extract
  • 1/3 cup coconut sugar
  • 1 3/4 cups blanched almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda

Cinnamon sugar coating:

Cinnamon churro frosting:

  • 4 ounces cream cheese (vegan or regular)
  • 1/3 cup powdered sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
  2. In a large bowl, mix together oil, milk, cookout sugar, vanilla extract until smooth
  3. Mix in the almond flour, coconut flour, cinnamon and baking soda until smooth
  4. Scoop about 2 tablespoons of dough into your hand and roll into a ball and place on baking sheet and repeat for remaining cookies
  5. In a small bowl, mix together the cinnamon sugar coating then dip each cookie in and roll around to coat
  6. Add cookies back to sheet and press down slightly so they aren’t in a perfect ball shape
  7. Bake in oven for 12 minutes then allow the cookies to cool on a cooling rack completely
  8. While the cookies cool, beat together frosting ingredients then top each cookie with frosting (I used on of these)

Notes

*I like to store these in the fridge since there is a cream cheese topping! I also freeze them for 2 or so months
