Crazy Good Vegan Apple Cobbler made with all gluten-free ingredients. Topped with your favorite ice cream and this is the most heavenly apple dessert!

Apple base:

  • 5 medium apples, peeled and sliced
  • 1/2 cup coconut sugar (I used this one!)
  • 1/2 teaspoon cinnamon

Cobbler topping:

  • 1 1/4 cup gluten-free oat flour
  • 1/2 cup coconut sugar (I used this one!)
  • 1/2 cup finely chopped nuts (walnuts or pecans are best)
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 6 tablespoons melted coconut oil (or use vegan or reg butter)
  • 1/2 cup non-dairy milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400 degrees
  2. In a 10-12 inch baking skillet, toss the apples, sugar and cinnamon together and mix well
  3. Bake in oven for 15-18 minutes
  4. While the apples bake, make the cobbler ingredients by mixing together flour, sugar, nuts, baking powder and cinnamon then add in oil, milk and vanilla until dough is formed
  5. Spread the cobbler dough across the skillet and bake for 20-22 minutes or until golden
  6. Serve with your favorite ice cream and enjoy!

Notes

*Store in fridge for 5 days and reheat in oven or microwave. Or you can eat cold like me!
