This Creamy Chocolate Peanut Butter Protein Pudding is such an easy and delicious snack or breakfast to make. Packed with protein and made with gluten-free ingredients. This is an easy 5 minutes of effort kind of meal to fuel you all week long.

Ingredients

Scale
  • 1 cup milk (can be almond, cow, coconut, oat, anything!)
  • 1 cup greek yogurt (or sub dairy-free yogurt!)
  • 1/4 cup maple syrup
  • 1/4 cup chia seeds
  • 3 tablespoons creamy peanut butter
  • 1/4 cup chocolate protein powder
  • 1 teaspoon vanilla extract
  • Topping ideas: granola, yogurt, peanut butter, sliced banana

Instructions

  1. Add all ingredients to a high-speed blender: milk, greek yogurt, maple syrup, peanut butter, protein powder, chia seeds, vanilla extract.
  2. Blend until smooth and creamy. Make sure the chia seeds are fully incorporated.
  3. Transfer the mixture into jars, meal prep containers, or any airtight tupperware you have on hand. This is a great time to portion it out if you’re planning to use it for grab-and-go breakfasts or snacks.
  4. Place in the fridge for at least 1 hour, or overnight. As it sits, the chia seeds will thicken the mixture into a pudding-like consistency.
  5. Here are some delicious topping ideas: granola, banana, dollop of yogurt for added creaminess or nut butter.

Notes

*Store in fridge for 5 days. Serve cool.
