medium avocados (ripe but not too mushy)
1/3 cup
coconut flour
1/3
unsweetened coconut shreds
2 tablespoons
tapioca flour
1 teaspoon
garlic powder
1/2 teaspoon
paprika
1/4 cup
Sir Kensington’s Mayo (
Fabanaise
or
Avocado Mayo
or
Classic
)
4 tablespoons
avocado oil
Ranch or
special sauce
for dipping (

Prevent your screen from going dark
Instructions
Preheat the oven to 425 degrees
Slice the avocados into thick slices (about 6 per avocado)
Mix together the coconut flour, shreds, tapioca, garlic powder and paprika
Whisk together the avocado oil and mayo of choice
Gently dip each avocado slice in the mayo mixture then coconut mixture and place onto a lined baking sheet
Repeat for each avocado slice then bake in oven for 10-15 minutes or until crispy
Serve with dressing of choice
