Crispy Loaded Smashed Potatoes!! Wow wow these loaded Smashed Potatoes hit the spot in every way. Crispy potatoes topped with turkey bacon, cheese and chives. Such a great appetizer or side dish to make.

Ingredients

  • 2 lbs pounds yellow potatoes
  • Sea salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3/4 cup shredded cheddar cheese
  • 5 slices turkey bacon, cooked and diced
  • 2 tablespoons chopped fresh chives
  • For serving: greek yogurt or sour cream for dipping

Instructions

  1. Preheat oven to 425 degrees F and line a baking sheet or grease a baking sheet
  2. Place potatoes in a large pot or dutch oven and cover with water by 1 inch
  3. Bring potatoes to a boil and simmer until just tender (no more than 15 minutes) then drain well and let it cool slightly
  4. Place potatoes on the prepared baking sheet (or sheets) and using a flat dry measuring cup or glass, carefully smash the potatoes until flattened but in one piece
  5. Brush with olive oil and season with salt and pepper
  6. Place in oven to cook for 25-30 minutes or until potatoes are golden brown and crispy. Add more oil as they cook if needed
  7. Then top each potato with bacon and cheese and add back to oven for 3-5 minutes or until cheese is melted
  8. Serve warm with chives sprinkled on top with sour cream or greek yogurt

Notes

*Store leftovers in fridge for 5 days. Reheat in skillet or microwave.
