Delicious Cheese Stuffed Meatballs! Made with all gluten-free, grain-free and keto-friendly ingredients. Plus they’re ready in 25 minutes!

Yield: Makes 12-15 meatballs 1x

Ingredients

  • 1 lb ground-beef
  • 1 egg
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning 
  • 1/2 cup almond meal or flour
  • Mozzarella cheese, cut into 1/2 inch squares or balls

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl, mix together all the ingredients besides cheese until the meat is fully combined
  3. Scoop about 2 tablespoons of meat into your hand and flatten it a bit so it is in a round shape
  4. Add 1 square of the cheese then fold up the sides to form the meatball (add more meat if needed)
  5. Repeat for remaining meatballs
  6. Warm a cast iron skillet for a few then remove from heat and add the meatballs (it’s optional but helps brown one of the sides!)
  7. Place skillet into oven and cook for about 20 minutes or until meatballs are ready
  8. Serve with your favorite pasta, on a salad or anything you are craving!

Notes

*Store leftovers in fridge for 5 days or freezer for 2 months. You can reheat in oven, microwave or stovetop
