These Black Bean Veggie Burgers are absolutely delicious. Oven-baked and made with gluten-free ingredients. Such an easy and healthy vegetarian recipe to try (even my husband loves these!).
1. Prepare the Black Beans
Preheat oven to 325 degrees F. Start by draining and rinsing the black beans. Pat them dry then add to a large baking sheet lined with parchment paper. Bake for 10 to 15 minutes so they dry out a bit.
2. Sauté the Vegetables
Heat a small amount of oil in a skillet over medium heat. Add the minced garlic, chopped onion, and bell pepper. Sauté until the vegetables are soft and the onion is translucent, about 5-7 minutes. Remove from heat and let them cool slightly.
3. Combine the Ingredients
To a food processor, add the sautéed vegetables, eggs, goat cheese, and gluten-free breadcrumbs, cumin, garlic powder, onion powder, smoked paprika, and ketchup. Season with salt and pepper to taste. Pulse until all ingredients are combined. Then add in the black beans and mash together with a fork so everything is combined.
4. Form the Patties
With your hands or a 1/2 cup measuring cup, form the mixture into patties. This recipe should make about 6-8 patties, depending on the size you prefer. If the mixture is too sticky, you can add a bit more breadcrumbs to help bind it.
5. Cook the Patties
Heat a bit of oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through. Alternatively, you can bake the patties in a preheated oven at 375 degrees F for about 20-22 minutes, flipping them halfway through.
6. Serve and Enjoy
Serve the black bean veggie burgers on gluten-free buns with your favorite toppings and condiments. Popular choices include lettuce, tomato, avocado, and a bit more ketchup or mustard. These burgers also pair wonderfully with a side salad or sweet potato fries.
