Delish Broccoli Cheddar Meatballs (gluten-free)

These Broccoli Cheddar Meatballs are such a delicious, healthy meatball recipe that packs in veggies, is made with gluten-free ingredients and these are ready in under 30 minutes.

Yield: Serves 4

Ingredients

Scale
  • 1 lb ground chicken or turkey
  • 1 egg
  • 1/3 cup almond flour
  • 1 cup broccoli florets, chopped (I use frozen and microwave)
  • 1/3 cup shredded cheddar cheese
  • Sea salt and black pepper to taste
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350 degrees F and line and grease a baking sheet with parchment paper
  2. In a large mixing bowl, combine the meatballs ingredients
  3. Using clean hands, meat-handling gloves or a scooper, form about 12 meatballs
  4. Add meatballs to baking sheet and bake in oven for about 18-20 minutes or until cooked through to 165 degrees F
  5. If you want to crisp them a bit, broil for 1-2 minutes too!

Notes

*Store leftovers in fridge for 5 days or freezer for 2 months
