Easy Cheeseburger Sweet Potato Bowls (gluten-free)

These Cheeseburger Sweet Potato Bowls are loaded with flavor and incredibly easy to make. They’re gluten-free, can be made plant-based (yes, really) and they are one of our go-to recipes for dinner right now.

Yield: Serves 3-4 1x

Ingredients

Sweet potatoes:

  • 2 large sweet potatoes or 4 small
  • Olive oil or avocado oil
  • Sea salt and black pepper to taste

Burger meat:

  • Olive oil or avocado oil
  • 1 lb ground beef or plant-based meat (beyond is great for this)
  • 1/4 teaspoon each of garlic powder, onion powder, smoked paprika, sea salt and black pepper

Toppings:

  • Shredded cheddar cheese or dairy-free cheese
  • Shredded lettuce
  • Diced tomatoes
  • Diced pickles
  • Special sauce – or make your own!
  • Sesame seeds

Instructions

  1. Preheat oven to 425 degrees
  2. Dice the sweet potatoes and coat in olive oil and season with salt and pepper
  3. Add to large baking sheet and cook for about 30 to 40 minutes or until  softened. I usually mix the potatoes a bit during cooking
  4. Next warm a large skillet with oil and add the beef or plant-based beef. Season with seasonings above and mix all together
  5. Cook for about 6 to 8 minutes, mixing every couple of months or so (I use this meat masher)
  6. Once sweet potatoes are done, assemble your bowl by adding sweet potatoes, meat and toppings and enjoy!

Notes

*Store leftovers in fridge for 5 days. Reheat in microwave
