EASY Gluten-free Monkey Bread

This Gluten-free Monkey Bread Loaf is like a cinnamon sugar pull apart bread and made with pancake mix, cinnamon sugar and a dreamy cinnamon sugar sauce. It’s an epic brunch for any occasion and is ready in under 30 minutes.

Ingredients

Cinnamon sugar coating:

  • 1 teaspoon cinnamon
  • 1/4 cup cane sugar or coconut sugar

Monkey bread dough:

  • 2 tablespoons unsalted butter, melted
  • 3 cups Krusteaz Gluten-free Buttermilk Pancake Mix
  • 3 large eggs
  • 1/4 cup milk of choice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Cinnamon sugar sauce:

  • 1/2 cup unsalted butter
  • 3/4 cup coconut sugar or brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees F and line a loaf pan with parchment paper and grease
  2. Make the cinnamon sugar coating but mixing together sugar and cinnamon in small bowl and set aside
  3. Mix together dough ingredients until combined (dough should be easy to work with)
  4. Using a cookie scooper, scoop up up ball of dough and coat in cinnamon sugar mixture then add to prepared loaf pan
  5. Continue for remaining dough then sprinkle cinnamon sugar over the dough
  6. Next make the sauce by melting butter then adding in the sugar and cinnamon and boil over medium heat, stirring constantly for 2 minutes and remove from heat
  7. Pour sauce over the dough in loaf pan then bake in oven for 22 to 28 minutes or until toothpick comes out pretty clean when you insert into center
  8. Allow the monkey bread to cool in pan for about 10 minutes then remove from loaf pan using the parchment paper and enjoy!

Notes

*Store leftovers in airtight container for 3 days or in fridge for 5 days
