Easy Gluten-free Strawberry Cookies

These Gluten-free Strawberry Cookies are absolutely delicious and such an easy cookie recipe to make. You only need 6 ingredients and these are dairy-free and with no refined sugar.

Ingredients

  • 1 egg
  • 1/2 cup + 2 tablespoons coconut sugar
  • Juice from 1 /2 lemon
  • 1/2 cup avocado oil
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cup gluten-free oat flour
  • 1 1/2 teaspoon baking powder
  • 3/4 cup chopped strawberries

Instructions

  1. Whisk together egg, lemon, oil, sugar and vanilla until smooth
  2. Mix in the flour, baking powder until fully combined
  3. Fold in strawberries then add the dough to the fridge for about 30 minutes to chill
  4. Preheat oven to 350 degrees and line a baking sheet with parchment paper
  5. Form the cookies by rolling 1-2 tablespoons of dough into your hand and add to baking sheet
  6. Repeat for remaining dough
  7. Bake in oven for 10-12 minutes or until edges are golden
  8. Allow the cookies to cool and enjoy!

Notes

*Store these in an airtight container for 3 days or in the fridge 5 days. I also like to freeze these for up to 2 months
