This Thai Chicken Salad is such an easy and delicious recipe for lunch or dinner. It is simple yet filled with flavors and tossed in a peanut dressing for an easy gluten-free and vegan recipe.

Thai chicken salad:

  • 3 cups cabbage, shredded (1 large head)
  • 12 large carrots, chopped
  • 1 mango, peeled and cut
  • 1/2 cup green onions, chopped
  • 1 red bell pepper, chopped
  • 34 cups cooked shredded chicken
  • 1/2 cups peanuts, chopped

Peanut dressing:

Instructions

  1. Add all salad ingredients to a large bowl
  2. Make the dressing by mixing all of the ingredients together in a small bowl or mason jar
  3. Toss the salad with the dressing before serving and enjoy chilled with desired crackers, in lettuce cups or as is!

Notes

*Store in fridge for 5 days. If meal prepping this, add dressing on right before serving and serve chilled
