These Frozen Yogurt Ice Cream Cookie Sandwiches are a must try summer dessert. Chocolate Chip Cookie sandwiches sandwiched between greek yogurt mixed with maple syrup and chocolate, these satisfy and are incredibly easy to make.

Ingredients

  • 8 ounces plain greek yogurt or use a dairy-free alternative
  • 1/2 cup chocolate chips or chopped up chocolate bar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 24 chocolate chip cookies

Instructions

  1. Add the Greek yogurt to a medium mixing bowl.
  2. Stir in the chocolate chips, maple syrup, and vanilla extract until fully combined.
  3. If the yogurt mixture seems thin, place it in the freezer for 15-20 minutes to thicken.
  4. Spoon about 2 tablespoons of the yogurt mixture onto the bottom of one cookie.
  5. Top with a second cookie and gently press together to spread the filling.
  6. Repeat with the remaining cookies and filling.
  7. Place the cookie sandwiches on a parchment-lined baking sheet or plate.
  8. Freeze for 2-3 hours, or until firm.
  9. Serve straight from the freezer and enjoy!
