Frozen Yogurt Oatmeal Bars (gluten-free)

These Frozen Yogurt Oatmeal Bars are one of our family’s favorite snacks to make. Plus they’re gluten-free, nut free-friendly, great to kids and you can use any yogurt you’d like on top!

Ingredients

  • 1 cup medjool dates, pits removed
  • 2 cups gluten-free rolled oatsĀ 
  • 1 cup creamy nut or seed butter (peanut, almond, sunflower anything!)
  • 1/4 cup ground flaxseeds
  • 1 tspĀ ground cinnamon
  • 1.5 cups yogurt of choice (can be dairy or non-dairy)
  • 1 cup frozen berries (blueberries, raspberries, any berries!)
  • 1 tablespoon chia seeds

Instructions

  1. In a food processor, blend the dates until broken into small pieces/makes a paste of sorts
  2. Add in the oats, nut butter, ground flaxseed, and cinnamon and blend again until well combined, stopping to scrape down the sides as needed
  3. Transfer the mix to an 8×8 parchment-lined baking dish and press firmly into the base of the dish
  4. Spread yogurt across the top of the oatmeal bars
  5. Microwave berries for 1 minute then stir and warm again for another minute
  6. Mix in chia seeds to make the “jam”
  7. Spread berry jam across the yogurt top then place into the freezer and let freeze for 1 – 2 hours, or until the bars are solid enough to cut
  8. Cut into squares or bars of the desired size and enjoy!

Notes

*Store in freezer for up to 2 months. Thaw out on counter for 3-5 minutes before eating
