Fruit Bark Clusters (vegan)

These Fruit Bark Clusters are such an easy and delicious healthy sweet snack. A twist on the viral recipe is made with all vegan and gluten-free ingredients and is great to keep in the freezer for snacking.

Yield: 6-10 clusters 1x

Ingredients

Scale
  • 12 strawberries, thinly sliced
  • 1/3 cup fresh blueberries
  • 1 small banana, sliced into rounds
  • 3 tablespoons creamy peanut butter
  • 1/3 cup cereal or granola of choice
  • 1 cup chocolate chips (dark, milk or semi-sweet)
  • For topping: cacao nibs, coconut flakes for more crunch!

Instructions

  1. Line a baking sheet with parchment paper and add strawberry slices, blueberries and banana to form a “flower” of sorts. Make sure they are all touching
  2. Then sprinkle some cereal across each cluster
  3. Melt chocolate chips in microwave (add coconut oil if needed) and melt in 30 second increments until melted (stir in between)
  4. Drizzle chocolate layer across the clusters
  5. Then drizzle peanut butter on top and sprinkle some cacao nibs or coconut flakes if using
  6. Add to freezer to set for at least 20 minutes then enjoy!

Notes

*Store in freezer for 2 months or fridge for 1 week
