These Ginger Scallion Turkey Burgers with Peanut Sauce are one of my favorite dinner recipes to make. They’re juicy, flavorful and ready in under 30 minutes. Perfect to add to your favorite bun, bowl or a salad.

Turkey burgers:

  • 1 lb ground turkey
  • 1/2 cup cooked quinoa
  • 2 tablespoons scallions, chopped (green parts only)
  • 1 tablespoon coconut aminos
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, minced OR 1/2 teaspoon ground ginger
  • Sea salt and black pepper to taste
  • 2 teaspoons sesame oil

Instructions

  1. First prepare the burgers by mixing together turkey, quinoa, scallions, coconut aminos, garlic cloves, ginger and salt and pepper until combined
  2. Divide meat into 4 equal patties about 1-inch thick and set aside (I use meat handling gloves)
  3. Heat sesame oil in a large skillet over medium heat and add patties to skillet. Press your thumb in center of each one to form an indentation (it helps burgers hold their shape as they cook)
  4. Cook the burgers until they are browned on outside and completely cooked through. This is about 5 to 7 minutes on each side. Internal temperature should be 165 degrees F
  5. While the burgers cook, mix together peanut sauce and set aside
  6. Remove from heat and serve with peanut sauce, on your desired bun and with toppings

*Store leftovers in fridge for 5 days
