These Gluten-free Blueberry White Chocolate Chip Blondies are an easy and delicious and extra fudgey EPIC blondie recipe to make! Plus they are vegan, nut-free and ready in 25 minutes.

Ingredients

Scale
  • 1 flax egg (1 tablespoon Garden of Life Organic Ground Flaxseed + 3 tablespoons warm water OR 1 regular egg)
  • 1/2 cup vegan butter, melted (or use regular butter!)
  • 1 cup coconut sugar (or use 1/2 brown sugar and 1/2 cup cane sugar)
  • 1 teaspoon vanilla extract
  • 1 1/2 cup gluten-free oat flour
  • 1 teaspoon baking powder
  • 1/2 cup white chocolate chips
  • 1/2 cup organic blueberries

Instructions

  1. Preheat oven 350 degrees and line an 8×8 baking dish
  2. Cream together butter, flax egg, coconut sugar and vanilla extract until smooth
  3. Mix in the flour and baking powder until fully combined
  4. Fold in blueberries and white chocolate chips
  5. Add to baking dish and bake in oven for 25 minutes or until golden!
  6. Slice into pieces and enjoy!

*Store in fridge for 5 days or freezer for 2 months
