Easy Chocolate Chip Olive Oil Cookies made with 6 key ingredients. These cookies are gluten-free, dairy-free and are ready in 10 minutes!



  • 1 pasture-raised egg
  • 1/2 cup extra virgin olive oil
  • 1/4 cup maple syrup
  • 1/4 cup + 2 tablespoons coconut sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cup gluten-free oat flour (spelt flour works too)
  • 1 teaspoon baking powder
  • 1/2 cup dark chocolate chips
  • Sprinkle of sea salt


  1. Preheat oven to 350 degrees and line a large baking sheet with parchment paper
  2. Whisk together the egg, oil, maple syrup, sugar and vanilla until smooth
  3. Mix in the flour and baking powder until smooth
  4. Fold in dark chocolate then scoop about 2 tablespoons of dough per cookie onto the baking sheet
  5. Bake in oven for about 10 minutes, or until golden
  6. Sprinkle some sea salt on top if desired and enjoy!


*Store leftovers in airtight container for 5 days or freezer for longer
