Delicious Gluten-free Granola Cups

These Gluten-free Granola Cups for a quick and easy breakfast recipe and they are egg-free, dairy-free and a kid and adult favorite!

Yield: 9 bowls or 16 mini muffins 1x

Ingredients

Scale
  • 1 flax egg (1 tablespoon ground flax + 3 tablespoons water) or 1 egg
  • 1/3 cup liquid coconut oil
  • 1/4 cup creamy nut butter
  • 1 1/2 cup gluten-free rolled oats (quick oats may work)
  • 1/4 cup + 2 tablespoons almond flour
  • 1 teaspoon cinnamon
  • Topping ideas: yogurt, granola and berries

Instructions

  1. Preheat oven to 350 degrees and line a muffin tin with liners
  2. Mix together the flax egg, coconut oil and nut butter and mix until creamy
  3. Add in the oats, almond flour, collagen and cinnamon and mix again
  4. Fill 9 muffin liners half way full then lightly pack mixture into cup, pushing up high on the sides to form the bowl
  5. Bake in the oven for 15-20 minutes then allow the bowls to cool for a bit before adding toppings
  6. I love adding coconut yogurt, fruit, granola and nut butter!

Notes

*Bowls will stay good in the fridge for 5 days. You can freeze them for 2 months as long as there are no toppings on them!
