These Gluten-free Jalapeño Cheddar Cheese Buns are an absolute dream! Naturally packed with protein, these fluffy buns are ready in 30 minutes and have the perfect kick to them.

Ingredients

  • 1 1/2 cup gluten-free flour (plus more for kneading)
  • 1/4 cup ground flaxseed
  • 4 teaspoons baking powder
  • 1 cup greek yogurt
  • 1 cup cottage cheese
  • 2 eggs, separated
  • 2/3 cup cheddar cheese, divided
  • 4 tablespoons pickled jalapeños 

Instructions

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper. Grease parchment paper well.
  2. In a large bowl, whisk together the gluten-free flour, ground flaxseed, and baking powder.
  3. In a medium bowl, mix together 1 egg, Greek yogurt, and cottage cheese until fully combined.
  4. Whisk the remaining egg in a small bowl and set aside for the egg wash.
  5. Add the yogurt mixture into the flour mixture and stir until a dough forms. If dough seems too thick or dry, add 1 tablespoon of water as needed.
  6. Fold in most of the shredded cheddar cheese and the chopped pickled jalapeños, reserving some cheddar cheese for topping.
  7. Divide dough into 6 to 8 equal portions and gently shape into round buns.
  8. Place buns onto prepared baking sheet, leaving space between each bun. They expand a lot when baking!
  9. Top each bun with extra shredded cheddar cheese and sliced pickled jalapeños.
  10. Brush tops and sides of buns with the egg wash.
  11. Bake for 18 to 22 minutes or until buns are slightly golden and cooked through.
  12. Allow buns to cool slightly before serving.
