These Gluten-free White Chocolate Macadamia Cookies are a DREAM! Crispy cookie edges with a soft-baked center and they are an easy cookie recipe to make.

Instructions

  1. In a large bowl beat butter and sugar in a bowl until creamy, about 2 minutes with a stand mixer or hand mixer
  2. Then beat in egg and vanilla until combined
  3. Add in the flours, baking powder, baking soda and beat until combined
  4. Fold in nuts and chocolate
  5. Cover and refrigerate dough for 45 minutes
  6. Scoop heaping tablespoon sized balls of dough and place on a parchment-lined rimmed baking sheet, spacing about 2 inches apart
  7. Bake at 350 degrees F until lightly browned, 10 to 12 minutes.
  8. Let cool on pan 10 minutes and add to cooling rack
