Ingredients

Scale

Wet ingredients

  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil or melted butter, cooled
  • 1/4 cup freshly squeezed orange juice
  • Zest of 2 oranges
  • 2 teaspoons vanilla extract

Dry ingredients

  • 1 3/4 cups gluten-free 1:1 all-purpose baking flour (with xanthan gum)
  • 1/2 cup almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 1/4 cups fresh or frozen cranberries, roughly chopped
  • 1 tablespoon gluten-free flour, for tossing cranberries

Orange glaze

  • 3/4 cup powdered sugar
  • 1–2 tablespoons milk of choice
  • 1/2 teaspoon orange zest

Instructions

  1. Preheat the oven to 350°F and line a 9×5-inch loaf pan with parchment paper. Lightly grease.
  2. Blend the cottage cheese if desired.  Add cottage cheese, eggs, maple syrup, melted coconut oil, orange juice, orange zest and vanilla to a blender. Blend until completely smooth and creamy.
  3. In a large bowl, whisk together gluten-free flour, almond flour, baking powder, baking soda, cinnamon and salt.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined. The batter should be thick but spoonable.
  5. Toss chopped cranberries with 1 tablespoon gluten-free flour, then gently fold into the batter.
  6. Transfer batter to the prepared loaf pan and smooth the top. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely tent with foil. Cook time will vary from oven to oven.
  7. Let the loaf cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
  8. Whisk powdered sugar, milk and zest until smooth. Drizzle over the cooled loaf, slice and enjoy!
