Healthy Apple Pie Oatmeal Pancakes (gluten-free)

The BEST apple pancake recipe ever! These healthy Apple Pie Oatmeal Pancakes are so easy to make and they are gluten-free, dairy-free and have no added sugar in them. Topped with a dreamy caramelized cinnamon apples.

Ingredients

Pancakes:

  • 1/2 cup unsweetened applesauce
  • 1 cup + 1/4 cup gluten-free oats (quick oats or rolled oats work! steel cut won’t work as well)
  • 1 egg (I haven’t tried flax egg)
  • 2 tablespoons ground flaxseeds
  • Optional: 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil, ghee or butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon apple pie seasoning
  • 1 teaspoon baking powder
  • 1 small apple, grated or chopped

Caramelized cinnamon apples:

Instructions

  1. Add applesauce, 1 cup of the oats, egg, flaxseeds, maple syrup if using, vanilla, oil, cinnamon, apple pie spice and baking powder to food processor or blender and pulse/blend until fully combined
  2. Mix in the additional 1/4 cup oats and grated apple
  3. Heat a large skillet with oil or butter on high for a minute or so
  4. Once warm, turn the heat to low and add about 2-3 tablespoons of batter onto the pan to form a pancake (I fit about 3 pancakes at a time on the pan)
  5. Cook for 3-4 minutes then gently flip and cook for another 2 minutes or until ready
  6. Remove from heat and enjoy with caramelized cinnamon apples and maple syrup!

Notes

*Store leftovers in the fridge for 5 days or freezer for longer!
