Healthy Caramelized Banana Bread Blondies (vegan + gluten-free)

Healthy Caramelized Banana Bread Blondies are paleo, gluten-free and they are made using my favorite Simple Mills Banana Bread Mix.

Ingredients

Caramelized Bananas:

  • 1 tablespoon avocado or coconut oil
  • 2 large bananas
  • Cinnamon to taste

Banana bread blondes:

  • 2 flax eggs (1 tablespoon ground flax + 2.5 tablespoons water per egg)*
  • 3 tablespoons avocado oil or liquid coconut oil
  • 1/2 cup filtered water
  • 1/3 cup creamy tahini (or creamy nut butter)
  • 1 box of Simple Mills Banana Bread + Muffin Mix**
  • Optional mix-in’s: walnuts, chocolate chips

Instructions

  1. Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper or grease well
  2. Begin making the caramelized bananas by warming oil over medium heat and make sure the skillet is coated
  3. Slice the bananas into skillet and sprinkle some cinnamon on top
  4. Cook over medium heat for a couple minutes then turn over and cook for another minute
  5. Remove bananas from heat or remove skillet from stove and begin making the blondies
  6. In a large bowl, whisk together the flax eggs, tahini, oil and water until smooth
  7. Mix in the banana bread mix until creamy and well combined
  8. Fold in the caramelized bananas and feel free to add in any mix-in’s here too
  9. Add batter to dish and bake for about 25 minutes, or until you stick a toothpick in and it comes out clean
  10. Allow the blondies to cool for a bit then slice and enjoy! Store leftovers in airtight container for 5 days or freezer for 2 months

Notes

*Sub 2 eggs instead of flax eggs if desired

**I haven’t used sub for the mix as this recipe was made to use up the mix! It is a favorite of mine 🙂 I also have these Tahini Blondies
