Healthy Chicken Caesar Lettuce Wraps

These Chicken Caesar Lettuce Wraps have quickly become my favorite lunch. They take 5 minutes to prep, are made with all gluten-free ingredients and are healthy and delicious.

Yield: Serves 3 or makes 6 lettuce cups 1x

Ingredients

Scale
  • 3 1/2 cup cooked chicken (I used rotisserie chicken to save time)
  • 1/23/4 cup caesar salad dressing (I love this one or my greek yogurt one)
  • 1/4 cup grated parmesan cheese
  • 1/4 cup radicchio, shredded
  • Fresh lemon juice, squeezed
  • 1/4 cup crushed cup gluten-free croutons, crackers or cheese crisps
  • Butter lettuce or romaine lettuce cups to serve

Instructions

  1. In a large bowl, mix together ingredients. I like to use less dressing to start because you can add more as you wish
  2. Layer 2 leaves on top of each other to make each wrap
  3. Add scoops of chicken salad onto lettuce and serve

Notes

*Store leftovers in fridge for 5 days. Add to lettuce wraps before serving. I also like to use less dressing at first so it doesn’t get soggy! Dress as needed
