Healthy Chocolate Chip Banana Bread Baked Oatmeal Bars made with 6 ingredients for an easy vegan, nut-free and gluten-free breakfast recipe!

Ingredients

  • 1 cup mashed banana
  • 1 cup oat milk (or sub any non-dairy milk)
  • 2/3 cup creamy nut butter or seed butter (code RACHL for free shipping)
  • 1 1/3 cup oat flour*
  • 1 1/3 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2/3 cup dark chocolate – code RACHL for free shipping

Instructions

  1. Preheat oven to 350 degrees and line a 9×9 baking dish with parchment paper (can use 8×8 too but baking time may vary)
  2. Mix together banana, nut butter and milk in a large bowl until creamy
  3. Stir in flour, oats and baking powder until mixed well
  4. Fold in dark chocolate then add to baking dish
  5. Bake for 25 minutes or until ready
  6. Slice into 6 bars and enjoy!

Notes

*Store in fridge for 5 days or freezer for a few months!

*Sub almond flour if needed!
