Healthy Chocolate Chip Banana Bread Baked Oatmeal Bars made with 6 ingredients for an easy vegan and gluten-free breakfast recipe!

Ingredients

Scale
  • 1 cup mashed banana
  • 1 cup non-dairy milk
  • 2/3 cup creamy nut butter or seed butter
  • 1 1/3 cup oat flour or almond flour
  • 1 1/3 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/3 cup chocolate chips or cacao nibs

Instructions

  1. Preheat oven to 350 degrees and line a 9×9 baking dish with parchment paper (can use 8×8 too but baking time may vary)
  2. Mix together banana, nut butter and milk in a large bowl until creamy
  3. Stir in flour, oats and baking powder until mixed well
  4. Fold in dark chocolate then add to baking dish
  5. Bake for 25 minutes or until ready
  6. Slice into 6-9 bars and enjoy!

Notes

*Store in fridge for 5 days or freezer for a few months!
