  • Cook Time: 30 mins
  • Total Time: 35 mins

Yield: Serves about 4

Ingredients

Scale
  • 1 tablespoon olive or avocado oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 3/4 cup diced celery
  • 1 lb ground chicken, turkey or beef
  • 3/4 cup frozen corn or canned corn
  • 1 large sweet potato, sliced into quarters
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon sea salt
  • 24 ounces chicken bone broth (or any broth)
  • About 18 ounces diced tomatoes
  • 1/3 cup mild or hot buffalo sauce
  • 1/4 cup ranch dressing

Instructions

  1. Heat a large pot on medium/high heat and add oil, onion, garlic, carrots and celery and sauté for 5 minutes or so
  2. Add in the ground meat and cook over medium heat (just crumble meat into pieces so it cooks in smaller pieces) until meat is fully cooked
  3. Add in the sweet potato, corn, spices, broth and tomatoes and mix together and bring to a boil
  4. Cook for about 20 minutes on medium/low heat, stirring occasionally
  5. Mix in the dressing and buffalo sauce then serve while warm! I usually top it off with some cilantro, cheese and chips

Notes

*Store leftovers in fridge for 5 days or freezer for 2 months
