These Strawberry Cheesecake Overnight Oats are the ultimate healthy breakfast to prep. It’s such a delicious breakfast idea that is also gluten free-friendly, vegan-friendly and takes 5 minutes to prep.

Ingredients

Scale
  • 2 cups gluten-free rolled oats
  • 3 tablespoons chia seeds
  • 2 cups frozen or fresh strawberries (stems removed)
  • 2 cups non-dairy milk (almond, coconut, anything)
  • 1 cup yogurt of choice (use dairy-free if needed)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup (or omit if preferred or making for infants)
  • Topping ideas: graham crackers, chia jam, fresh strawberries

Instructions

  1. Add strawberries, milk, yogurt, maple syrup and vanilla extract to blender and blend together until everything is pureed
  2. Evenly distribute the oats and chia seeds to mason jars or tupperware of choice then the same for the “strawberry milk”
  3. Cover and add to fridge for at least 2 hours or overnight until ready to eat. I like to prep these the night before and they stay good for 5 days in fridge so it’s great to prep in advanced
  4. When you are ready to eat, add any desired toppings you’d like and enjoy!

*This recipe can be doubled or tripled or even halved if you prefer
