These make-ahead high protein Maple Chicken Sausage Breakfast Sandwiches are the best breakfast or lunch idea to meal prep. Homemade maple chicken sausage made with simple ingredients.

Ingredients

Eggs:

  • 8 eggs
  • 2/3 cup cottage cheese (full-fat or low-fat)
  • Sea salt and black pepper to taste

Maple chicken sausage:

  • 1 lb ground chicken
  • 3 tablespoons maple syrup
  • 2 tablespoons almond flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon dried sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt

Sandwiches:

  • 68 english muffins of choice
  • 68 slices cheddar cheese or cheese of choice

Instructions

Make the Eggs:

  1. Preheat your oven to 375°F and grease a baking sheet (9×12 or so). Whisk or blend together the eggs, cottage cheese, salt, and pepper until fully combined.
  2. Pour into the baking sheet and bake for 17-20 minutes or until set.
  3. Let them cool slightly, then slice into squares or circles to fit your English muffins.

Prep the Maple Chicken Sausage

  1. In a large bowl, mix together all sausage ingredients until fully combined. Form into 6–8 patties. Heat a little oil in a skillet over medium heat and cook the patties for about 4–5 minutes per side, until golden and cooked through.

Assemble the Sandwiches

  1. Toast your English muffins if desired. Layer on a slice of egg, a maple sausage patty, and a slice of cheese. You can wrap them in foil or parchment paper to store in the fridge or freezer in large bag.

To Freeze + Reheat

  1. Wrap each sandwich tightly in parchment paper and freeze in large bag. When ready to eat, warm in the microwave (unwrap first!) for 1–2 minutes or pop into the toaster oven to crisp up.

Reheating instructions: 

  1. Microwave: wrap sandwiches in a damp paper towel. Microwave on defrost 50% power for 1 minute. Flip over then warm for another 1-2 mins until eggs and sausage are heated through.
  2. Oven: Preheat to 375 degrees F and have sandwich thaw on counter as oven warms up. Place sandwich on a baking sheet and make for 10-15 minutes until heated through.
