My Mama’s Best Ever Hamantaschen Recipe! These are a family staple and truly the best hamantaschen cookie recipe ever – made with just 7 total ingredients.

Ingredients

  • 1/2 cup softened butter (can likely use vegan butter too)
  • 1 cup coconut sugar or cane sugar
  • 2 tablespoons orange juice (we juiced a sumo orange – so good!)
  • 2 eggs (I haven’t tried flax egg)
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • Jam/filling of choice: I used raspberry jam + sprinkles
  • 2 cups flour (I used this organic all purpose flour – code RACHL. GF all purpose flour works too!)

Instructions

  1. In a large bowl, cream together the butter and sugar with a mixer until combined
  2. Add in the eggs, orange juice and vanilla extract and mix again until fully combined
  3. Mix in the baking powder and flour to form the dough
  4. Form the dough into a thick circle and wrap it in plastic wrap and add to fridge for at least 2 hours (or overnight)
  5. Preheat oven to 375 degrees and line 2-3 baking sheets with parchment paper
  6. Roll the chilled dough onto a lightly floured surface to about 1/8 inch thick
  7. Cut out circles about 3 inches in diameter (I used a large drinking glass)
  8. Place a teaspoon of filling into the center of each circle
  9. Fold up the edges to form a triangle and pinch together edges firmly
  10. Add to the baking sheet and bake in oven for 12-15 minutes
  11. Allow the cookies to cool for a few then enjoy!
