Nanna’s Homemade Chicken Soup Recipe! The best homemade chicken soup recipe filled with tons of veggies, fresh herbs and it’s super simple to make.

Yield: Serves 5-6 generous bowls 1x

Ingredients

Scale
  • 1 whole chicken (about 4 lbs)
  • 1 medium onion, peeled
  • 2 celery stalks, cut into thirds
  • 3 medium sized carrots, cut into thirds
  • 2 medium sized sweet potatoes, peeled and cut into 1/8 pieces
  • 2 parsnips, peeled and cut into thirds
  • 1 turnip, peeled and cut into quarters
  • 6 stems of parsley
  • 6 steams of dill
  • Sea salt and black pepper to taste

Instructions

  1. Stuff the onion into the cavity of the chicken and add to a large pot along (breast side down) and season with salt and pepper
  2. Add all veggies to a large pot with the chicken
  3. Fill the pot with cold water to the top (about 90% full)
  4. Cook on high and bring to a boil then lower and let the soup simmer for about 1 hour 30 minutes
  5. Then add in the herbs and cook for another 30 minutes
  6. Next remove the chicken and add to a large bowl
  7. Then remove and discard the onion, herbs and the celery stalks
  8. Take out half the carrots, parsnip and turnips and save to eat
  9. Next take your immersion blender and blend the remaining veggies into the soup (carrot, sweet potatoes, etc.) and blend until smooth
  10. Remove all the meat from the chicken and discard the bones then add meat into chicken soup or save some of it to make a killer chickens salad or eat
  11. Enjoy soup while warm and you can serve with some rice or couscous as well! We use this for our matzo balls.

Notes

**If soup is too thick, add more water to it after blending
