No-Bake Oreo Marshmallow Bars (gluten-free)

These Oreo Marshmallows Bars are such an easy cookies and cream dessert bar! No baking needed and you only need 3 ingredients to make them.

Ingredients

  • 16 ounces gluten-free oreo-like sandwich cookies or oreo’s roughly chopped with ¼ cup reserved for topping
  • 1 bag (10.5 ounces) mini marshmallows
  • 3 tablespoons butter, room temperature

Instructions

  1. Spray an 8×8-inch baking dish with nonstick cooking spray or line with parchment paper
  2. In a large microwave-safe bowl, combine marshmallows and butter
  3. Melt the marshmallows and butter in the microwave in 30-second intervals, stirring in between, until melted (about 2 minutes).
  4. Add chopped cookies (reserving ¼ cup for the topping) to the marshmallow mixture and stir well to combine
  5. Pour mixture into the prepared 8×8-inch pan and press into the pan with a spatula
  6. Top with reserved chopped Oreo cookies.
  7. Place pan in the refrigerator to set for at least 2 hours then slice into 9 bars and enjoy!

*Store leftovers in fridge for up to 5 days!
