This One-Pan Broccoli Cheese Rice is a delicious cheesy, easy dinner or side dish loaded with simple ingredients like carrots, rice, broccoli and cheese. A perfect dish for the whole family.

Ingredients

Scale
  • 2 tablespoons butter, ghee or oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded carrots
  • 2 cups broth (veggie or chicken works)
  • 1 cup uncooked rice
  • 1 cup non-dairy milk
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup grated parmesan cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Add butter or oil to large pan/skillet and warm over medium heat
  2. Add in the onion and garlic and cook for 4-5 minutes or until fragrant
  3. Next add in the carrots, rice and broth and mix together
  4. Bring to a boil then simmer and put a lid on and cook for 10 minutes
  5. Remove lid then add in broccoli and milk and mix
  6. Put the lid back on and cook for 4 minutes or until broccoli is tender
  7. Add in the cheese, stir and enjoy warm!

Notes

*Store in fridge for 5 days and reheat in microwave or stovetop
