One-Pot Creamy Broccoli Pasta

This One-Pot Creamy Broccoli Pasta is a staple in our dinner line up for the kids! Even my kids who don’t “like” broccoli, devour this and it is gluten-free and so easy to make.

Yield: Serves 3-4 1x

Ingredients

Scale
  • 3 cups gluten-free penne, uncooked
  • 1 cup frozen broccoli florets
  • 1/2 cup pasta water, reserved
  • 1 tablespoons butter
  • 1/2 cup shredded cheese (I use cheddar!)

Instructions

  1. Bring a large pot a water to boil and add in the pasta and cook per instructions on box
  2. Add in the broccoli when there are about 4-5 minutes remaining and don’t forget to reserve 1/2 cup of the pasta water
  3. Strain pasta and broccoli and add back to pot and add in the butter, water and cheese and mix well
  4. Serve while warm!

Notes

*Store leftovers in fridge for 5 days and reheat in microwave or in a pot on the stove with a splash of water/butter

**Feel free to add any seasonings you want as well!
