One-Pot Skillet Lasagna

This One-Pot Skillet Lasagna is a delicious and healthy meal to make any night of the week. It’s a great 30-minute dish using all gluten-free ingredients and with the flavors or classic lasagna except half the effort and time is involved.

Ingredients

  • 1 lb ground meat of choice (I usually use sausage, beef, turkey or chicken)
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 8 ounces gluten-free farfalle pasta (or another small shaped pasta)
  • 22 ounces marinara sauce of choice
  • 2 1/4 cup chicken or beef broth (or water but I prefer broth for flavor and nutrients)
  • 2/3 cup cottage cheese (or use ricotta cheese if you want)
  • 1 cup mozzarella cheese, shredded
  • Sprinkle of parmesan cheese and chopped basil for serving

Instructions

  1. In a large skillet, warm oil over medium heat and add garlic to sauté for 2-3 minutes
  2. Add in the ground meat of choice (feel free to add any spices if you want) then cook until meat is browned and cooked through (use wooden spatula to get into smaller pieces
  3. If meat is oily, strain any excess fat or oil then pour tomato sauce, broth and pasta noodles to skillet and stir to combine
  4. Cover with a lid and bring to a boil then simmer and reduce heat for 14-15 minutes or until noodles are cooked through
  5. Remove from heat and stir in cottage cheese and mozzarella cheese
