Sharing these Paleo Pigs in a Blanket Sausage Style! These are the ultimate “healthier” pigs in a blanket recipe to make!

Ingredients

Scale
  • 3 cups almond flour
  • 1/4 cup cold butter, cut into smaller pieces
  • 2 eggs
  • 4 sausage links (cooked), cut into 1 inch pieces
  • Dipping ideas: ketchup or mustard!

Instructions

  1. Add the almond flour, butter and eggs to a food processor and pulse until smooth (I stopped and scrape down edges 1-2x)
  2. Remove dough from the food processor and divide into 2 balls then wrap each in plastic wrap and add to fridge for at least 30 minutes
  3. Next roll out each ball (1 at a time) on a floured surface then cut into triangular strips
  4. Add 1 piece of cut sausage to each triangle and roll the dough to form the “blanket”
  5. Repeat for remaining ball of dough and sausage
  6. Warm oven to 400 degrees and cook them for about 15 minutes or until golden brown on the edges
  7. Allow them to cool for a few (we like to put on a cooling rack) then enjoy with desired dip!

Notes

*Store leftovers in fridge for 5 days and reheat in oven or you can be crazy like me and eat cold!
