Preheat your oven to 425 degrees F and line a baking sheet with parchment paper
Place the sweet potatoes onto the baking sheet and drizzle the oil, salt, pepper, and cinnamon over the top and mix well (hands work best for this job) then spread the sweet potatoes out in a single layer
Roast the sweet potatoes for 35 minutes, or until they are soft and starting to brown on top
Sprinkle the pecans over the top and return the baking sheet to the oven for 5-7 minutes, until the pecans are golden and smell fragrant
Serve while warm with desired mains or other sides

*Store in fridge for 5 days and reheat in oven or over stovetop in a skillet or microwave
