9.5 ounce package soba noodles (can sub any grain you’d prefer)
1 cup
kale (or greens of choice)
1 tablespoon
avocado oil
1/2
lemon
3 tablespoons
scallions, chopped
1
cucumber, sliced
1
avocado, sliced
5 ounce
can Safe Catch Foods Tuna
2 tablespoons
mayo of choice
Salt & pepper to taste
Toasted seeds (I used pumpkin)
Instructions
Cook soba noodles according to package
Strain once ready and rinse in cold water to prevent sticking
In a large bowl, massage kale with avocado oil and lemon juice
In a small bowl, mix together tuna and mayo and mix well
Assemble bowls by adding soba noodles, kale, scallions, cucumber, avocado, tuna and seeds to each
Enjoy!
*Can be made up to a few days in advanced but don’t add avocado until ready to eat!
