Sweet and Hot Honey Sweet Potato Carrot Bake

This healthy Sweet and Hot Honey Sweet Potato Carrot Bake is the ultimate side dish to make. Sweetened with some apples and dried apricots with a little extra flavor from broth, shallots, garlic and spices!

Ingredients

  • 3 medium sweet potatoes, washed, peeled and cubed
  • 1012 medium carrots, cut into thirds
  • 1 granny smith apple, cut into cubes
  • 2 shallots, chopped
  • 2 garlic cloves, minced
  • 1/2 cup dried apricots (or dates if you prefer)
  • 1/2 cup broth of choice (we used chicken)
  • Sea salt and black pepper to taste
  • 1/2 teaspoon cinnamon
  • Hot honey to taste

Instructions

  1. Preheat oven to 400 degrees and take out a oval gratin baking dish (or something similar!)
  2. Add the sweet potatoes, carrots, apple, apricots, shallots and garlic to a large bowl
  3. Mix in in broth, cinnamon and salt and pepper until combined
  4. Add the mixture to the baking dish then drizzle desired amount of hot honey on top
  5. Cover with foil then bake in oven for 60 minutes and remove foil and cook another 15 minutes or so (or until veggies are cooked and softened!)
  6. Serve with desired mains!

Notes

*Store in fridge for 5 days and reheat in oven or stovetop or microwave
