The Best Healthy Gluten-free Zucchini Tots made with 6 key ingredients – these oven-baked veggie tots are a family favorite over here and so easy to make.

Ingredients

Scale
  • 2 zucchini, shredded
  • 1/2 teaspoon salt
  • 2 carrots, peeled and shredded
  • 1/2 cup gluten-free flour or oat flour (I haven’t tested subs)
  • 1/4 cup coconut flour (I haven’t tested subs)
  • 2 large eggs (I haven’t tested flax egg)
  • 1/4 cup shredded cheese (cheddar or mozzarella I usually use)
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet with oil of choice
  2. Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes. Using a clean dish towel or paper towel or cheese cloth, drain zucchini completely, removing as much water as possible
  3. Transfer zucchini to a large bowl then stir in carrots, flours, eggs, cheese and spices and mix until evenly combined
  4. Form zucchini into tots and place onto the prepared baking sheet
  5. Place into oven and bake for 10 minutes then flip gently and bake for another 10 minutes or so
  6. Serve while warm with desired condiments like ketchup or mustard

Notes

*Store leftovers in fridge for 5 days or freezer for 2 months

**I usually reheat in oven or microwave. Ezra also eats them cold!
