The Easiest Gluten-free Shortbread Cookies made with 3 key ingredients and drizzled with some dark chocolate on top. Such a delicious and simple cookie recipe to make.

  • 3 tablespoons softened grass-fed butter (or sub vegan butter)
  • 3 tablespoons honey or maples syrup
  • 1 1/4 cup almond flour
  • Optional: 1 tsp vanilla extract and melted dark chocolate for drizzling


  1. Cream together the butter and maple syrup (and extract if using)
  2. Add in the almond flour and mix until smooth
  3. Add the dough to the fridge for 30 minutes to chill a bit
  4. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper
  5. Roll out into large rectangle and shape in 12 cookies
  6. Bake cookies for 11 minutes, watching closely to ensure they don’t burn
  7. Allow the cookies to cool for a few then drizzle chocolate on top and enjoy!


*Store leftovers in airtight container for 3 days or fridge for 5 days. This recipe also freezes really well!
