The Easiest One Pot Pasta Recipe to make. This is seriously fool proof guys! One of the best ever simple and healthy weeknight dinner recipes that cooks in just one pot aka no mess!

Yield: Serves 3

Ingredients

Scale
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 small onion, chopped
  • 2 cups cherry tomatoes
  • 8 ounces spaghetti of choice (gf if needed!)
  • 16.9 ounces chicken or beef broth (about 2 cups)
  • 1 cup filtered water
  • Sea salt and freshly ground black pepper, to taste
  • 2/3 cup freshly grated Parmesan cheese (or less depending on preference)
  • 2 tablespoons chopped fresh parsley leaves
  • 2 tablespoons chopped fresh basil leaves

Instructions

  1. In a large sauce pan or pot warm the oil over medium heat
  2. Add in the garlic and onion and cook for about 3 minutes or until fragrant
  3. Add in the tomatoes and cook for another 3 minutes or so
  4. Next add in the spaghetti and half the broth and cook over medium heat then add the remainder of the broth and water as the spaghetti cooks (you may need more!) for about 8-10 minutes (time will vary based off the spaghetti you use)
  5. Turn heat to low and add in the sea salt, black pepper, cheese, parsley and basil and mix well
  6. Serve while warm and add more cheese and seasonings on top if desired!

Notes

*Store leftovers in fridge for 5 days
