The Viral Jennifer Anniston Salad Made Gluten-free

The “Jennifer Anniston Salad” that Jen and the girls on FRIENDS ate every single day for 10 years on the set! And after trying it, now I know why.

Yield: Serves about 5


  • 1 cup quinoa, uncooked
  • 1/2 cup red onion, chopped
  • 1/2 cup parsley, chopped
  • 1/3 cup mint, chopped
  • 1/2 cup chickpeas, rinsed
  • 1/3 cup pistachios, unshelled
  • 1/2 cup cucumber, chopped
  • 1/2 cup crumbled feta cheese
  • Olive oil, lemon and sea salt and pepper to taste


  1. Cook quinoa according to instructions and set aside to cool
  2. Once quinoa is cooled, add all of the ingredients to a large bowl and mix well
  3. Drizzle with olive oil, lemon and add salt and pepper and enjoy!


*Store leftovers in airtight container in fridge for 5 days
