Delicious Salmon Cobb Salad

A Delicious Salmon Cobb Salad for a twist on the classic cobb salad recipe. One of our favorite go-to salads to make and pair with any dressing you’re are craving!

Yield: Serves 2

Ingredients

  • 2 5-6 ounce pieces cooked salmon (I look for Wild King Salmon – my favorite)
  • 4 hard boiled eggs, cut into small pieces
  • 4 pieces cooked bacon, cut into small pieces
  • 1 small cucumber, chopped
  • 1/3 cup blue cheese crumbles
  • 1/2 avocado, cut into cubes
  • 5 cups greens of choice (I usually use butter lettuce or romaine)
  • Your favorite dressing (I love using dijon, ranch or my caesar one)

Instructions

  1. Toss together the eggs, bacon, cucumber, blue cheese, avocado and greens in a large bowl until mixed
  2. Distribute to two bowls and top with salmon and dressing and enjoy! (I recommend adding the salmon last and while warm if you can so the natural oils go into the salad!)

Notes

*Store leftovers in fridge for a couple days, but usually this is best day of!
